Ribs did not come out
« Reply #-1 on: September 01, 2014, 08:47:21 PM »
Well today my ribs didnt come as planned.  They cooked in 2.5hrs and were dry, but not tough.  They were not terrible, but not my regular standard.  My rub was the same as last couple of cooks, Memphis dust.  Things that were different today, I had to thaw them in cold water  today.   I biffed the lite, so I had to crack the lid to a few times to keep my temp 250 plus.  I would close the lid after 10 minutes when it hit 275.  How things normally go, thaw ribs in fridge 2 days out from cook.  My barrel normally fire ups and runs at 275, and spare ribs take 3.5 to 4 hrs.   So was it the thawing method, or just a rough couple of racks.  They had decent marbling.

Sometimes ribs just don't like temperature flactuations.
One thing I've learned is to stop fighting the PBC. It will eventually get to the cooking sweet spot.

This is one thing I can say about my PBC. I just load it the same way every time and get the same reliable results!

Tough is seldom a problem caused by external factors in the PBC.  So, my guess is you just got some bad racks.  I don't understand "biffed the lite", though.  Fill the pan, light, wait 20 minutes, cook, is the PBC mantra.

I've cooked ribs twice on my PBC and they came out great both times.  Probably the best tasting ribs I've made so far.  All of my other rib cooks have been on my Weber WSM's.  I've used the beef and game rub both times on the PBC so that may be part of it.
