Title: Good sources for meat cut information

I was rummaging around my desk at work the other day and uncovered a very old copy of The Guide To Identifying Meat Cuts which was produced by a joint effort of the National Cattleman's Beef Assn and National Pork Council.   It provides a fairly good run down of the various cuts of meat found in cows, hogs, lamb and veal.

Could not find an updated copy on their website. Perhaps you might find it for sale on Amazon or at a local new/used book store. There ARE cut charts which you can purchase fairly inexpensively.  You can also print out cut charts from the beef and pork council websites or your state beef or pork assn. website for no charge.

I always like to recommend that outdoor cooks educate themselves on where various cuts of meat come from, so that they are a better educated consumer at the meat counter.
