Title: A delicious "new" condiment!

It’s “Tasty Tuesday!”  The holidays are in full swing and delicious meals are planned to help make the days even more festive and delicious. If you’re planning on cooking turkey, pork roast, pork chops, pork loin, or ham to celebrate the special days of the season, try this: Cranberry Catsup. You can make it as sweet or savory as you desire! You can use the finished product as either a condiment or glaze.

Cranberry Catsup
Makes approx.. 1 quart

Ingredients:
1 12oz. package whole cranberries
3 cups light brown sugar
2 cups port wine
2 cups minced white onion
1 TBSP grated fresh or dehydrated orange peel
(optional: 1 TBSP grated fresh or dehydrated lemon peel)
1 tsp. ground cinnamon
1 tsp. allspice
1 tsp. black pepper

Preparation:
Combine all ingredients in a heavy saucepan and bring to a gentle boil. Stir ingredients well to mix. Simmer the catsup for (15) fifteen minutes, stirring frequently. Allow the mixture to reduce and thicken. Remove from stove, allow to cool. Then blend until smooth in a food processer or blender.

Serve hot. You can also pour into sterilized canning jars and seal to give as gifts.  The cranberry catsup can be store un-sealed in the refrigerator for up to (3) three months without spoiling.
