I usually go fat side down, but for other reasons.  The main reason is that you can't really get a good bark on top of fat, so I go meat side up to get a better developed bark.

I usually go fat side down, but for other reasons.  The main reason is that you can't really get a good bark on top of fat, so I go meat side up to get a better developed bark.
