First try at low carb pot pie (not my best work)

I had a craving for pot pie and being on a low carb diet that ain't going to happen or was it?

I decided to try and make a pot pie from the low carb cheese bread recipe I've been using.  I started by baking to lower crust in a 4 in ceramic dish then I was going to add the chicken (pre-cooked on the Rec Tec) and add a gravy for the filling.  I didn't want to get to fancy for the first try but wanted to see if I could pull it off then go fancy later on.

So I started with cheddar cheese bread (mistake #1) cheddar cheese is very greasy
I then added smoked chicken which I made a few months back (it was good, but smoked chicken not the best for pot pie)
Next mistake I used gravy for the pot pie sauce (to heavy and not the best for pot pie)

Was it good?  Yes and no, I'll do it again but not the way I did this one.   Will use a different bread mix and not use smoked chicken

The only failures are when we quit trying.....

Looks good enough to eat -and definitely a worthwhile project to perfect this Tommy. It has been a about 18 months since I have had a pot pie. AND I WANT ONE!!!! :D

Thanks, but I assure you my better pot pie is in the works  ;)

Main issue I think was the cheddar mix cause it was to oily.    I will use a different mix next try

I'd try cooking the veggies in a saucepan and then add a roux to that to thicken and then the chicken at the end.  Spoon that into the shell and see what happens.

good luck on your next try but I'll say the 1st sure looks tasty.
