This is one of our favorite pasta dishes and with the Zucchini pasta it was abso-freaking-lutely delicious, and super low carb to boot!

Zucchini Pasta with Sautéed Shrimp, Tomato, Onion & Olives in Olive Oil, seasoned with a little fresh garlic, salt, pepper.


I was very happy after this meal!  :)

The recipe is not complicated at all.  Just heat up about 1/2 cup of olive oil, toss in some fresh garlic & onion followed by some pre-cooked shrimp, black or Calamota olives and some chopped tomato.  Season to taste with salt & pepper.  Serve over top regular pasta or steamed Zucchini pasta.

That looks fantastic and so easy to fix. Thinking about buying a spiralizer. Can you recommend a brand?

That looks fantastic and so easy to fix. Thinking about buying a spiralizer. Can you recommend a brand?

There are several spiralizers out there now in all price ranges.  We got the Veggetti Pro Table-Top Spiralizer (from Walmart).  The suction cup doesn't always stay put, so I have to hold it with one hand while cranking with the other, BUT that is a minor issue and may very well be due to the surface on which I'm using it.  Otherwise, it works fine, and is easy and quick to use.

We like the spiralized zucchini pasta enough, that we are thinking of getting a small electric counter-top model.

Excellent recipe Cliff!! I love shrimp and adding tomatoes is a nice touch. Scrumptious low carb meal ...

I use a Zoodle for my zucchini pasta but there are many models that easily work. I need to get back to using my unit for some zucchini pasta.

I can't eat white flour pasta any longer, only whole grain. I like that but I really want to try the veggie pasta spirals and what a great pairing with shrimp!  :thumbup:
