Had a nice 1 1/2 in ribeye in the freezer that was just begging to be used  ;)   

(Tom Horseman would be proud of me on this one) :) ;)

So I thought I'd try to smoke it for 30 mins low temp smoke then sear it and here is the results

Smoked 30 mins indirect with hickory pellets then removed while the temp climb and used GrillGrates

Turned out really good although a little over cooked (cause Kimmie was sharing part of it)

Only thing I'm having issues getting this little Weber to sear high temp :(    About 480 is as high as I can get it

Don't remember where I saw it first but I've found that I can get a great sear by partially filling a starter chimney, lighting it, and putting a small grill directly on top of it. Works every time.

You can try to build the lit coals up high as they can go under the grill grates.............

Yes!  Modify it!  Forced Air Injection thru the bottom vent and Ill bet we could sear that steak  in no time!  :D

I need to make a little jet injection motor run it on batteries  :thumbup:

Check out BBQ Dragon fan. I bought one for half price. Works great, clamps, goose neck, plus rechargeable batteries.
