Ketogenic Grilled meatballs

This is for low carb/ ketogenic folks. But the taste is universal!!

A pound of 80/20 beef
A pound of Johnsonville bulk mild Italian sausage
3 egg yolks
A few shakes of wosheshestire sauce
A bunch of freshly grated Parmesan cheese
About a cup of mozzarella cheese
Salt and pepper
Sriracha
About half a cup Finely processed pork rinds
Half a cup diced onion.

Mix that mess by hand preferably a day before.
Form balls before cooking. Wrap some of them with bacon.

Get the grill as hot as possible set indirect cooking.
Get them balls on there. Should take about 15 minutes to 155 degrees.
If you want some charcoal then at 150, toss em over the coals.

Moist, tender, taste out of this world.

Recipe sounds good but wonder what the carb count is

Tommy, the only carbs are: about 6 carbs for the 1/2 cup onion, and around 4 - 5 carbs for the cheese. So figure 10 - 11 carbs divided by 14 meatballs = less than 1g net carb per meatball.

whole Batch is actually less than 10 grams. So per meatball is probably almost zero.

Added to my low carb recipe folder.  I need to get back on the bandwagon and low carb has worked for me before.
