In my never-ending pursuit to make superb ribs, I attempted yet another method.  I bought 2 slabs of ribs from Costco.  I seasoned them with some homemade rub and put them on the upper shelf of my MAK on smoke for 1 hour.  After the hour, I raised the temp to 225F and cooked for 2 more hours.  After those 2 hours were up, I double wrapped in foil with butter, brown sugar, and honey.  Put back on the MAK for 2 hours at 250F.  When those 2 hours were done, I unwrapped the ribs, sauced them with homemade BBQ sauce, and put them back on the MAK for 30 minutes to let the sauce set a little.  Despite the nearly 6 hours of prep/cook time, the ribs were definitely worth it.  Probably some of the best I've made since purchasing my MAK 2 Start.
