MAK-nificently simple lunch.....
« Reply #-1 on: March 13, 2013, 11:44:00 AM »
Used the micro plane to shave 2 smoked/dehydrated Jalapeno's from last years crop.......

Dust these into some fresh cut cut up russet potatoes and diced sweet onion...add a little Jane's Crazy Salt...

Set the MAK for SMOKE...for about 1 hour and put on some of the chicken w/dried cranberries and pistachio sausage LOOK at that color from the smoke!!!! The flavor was just amazing too!

(recipe HERE:  http://www.letstalkbbq.com/index.php?topic=3072.0 )

And...uh...in order to "reduce carbs" ;)...I let 2 sausages into the french bread. Hey - it was too big for one sausage. ;D

Man - that was SOOOO good.

OK... You got me going with that so I thought I'd put a spin on it and make smoked home fries. (I'm getting bored with regular home fries.)

A couple of diced russets... some fresh chipotle powder (from yesterday's smoked jalapenos), a healthy sprinkle of Instant Gourmet, freshly ground black pepper, sliced red onion and diced green pepper...

Onto the Yoder (with hickory) and the A-Maze-N tube for some extra smoke... 250 degrees F.

Gonna let it cook for an hour and see where it needs to go from there... I have some homemade andouille that I'll diced up and add later.

Tee, I like the flavor combo you have going on in that sausage, and them taters look mighty tasty.

It looks like you've discovered the wonder of the MAK griddle.  I'm willing to bet it gets used a lot. 8)
