They took about two hours but came out OK... the onion and bell pepper were overcooked so I took them out of the mix and added freshly sauteed.

I "carbonized" my onions too, Mike... :-[...Next time I will add the onions and any peppers, etc. at about 3/4 of the way thru the cook.

Thanks Don. The coriander and the garlic bring the savory aspect up in this sausage.

You could use other seasonings as you like of course.

I'll just saute up some red onion, bell pepper and garlic... add them to the reheated pots... then serve them with Cackalacky or Tiger Sauce.
