My first attempt at chicken in the PBC.  It took a lot longer than I expected, had a hard time getting the temp up.  I am going to add more lit coals next time.  I pulled about a quarter of the coals out of the basket.  It was about half a chimney.  After an hour it still was around 225, so I cracked the lid for 15min.  It came up to about 350, so I put the lid on and it settled around 250.  After an 2 hrs I cracked the lid again, to speed it up.  We were getting hungry, and it was getting late.  The end result was good for the chicken.  Some of the juiciest chicken I have ever had, period.  The skin was perfect also.  The potatoes did not make it.  I need to bend skewer more.  I had it at about 60 degrees, it needs a 90.  Temp was about 45 here in ST Louis today.  Tomorrow is pork shoulder, I will figure out the timing and initial load soon.  The chicken looks darker in pic than it really was.  Key word was, its all gone. ;D

Chicken looks great!

If you open the air shutter you can increase the temp just take a picture of it's location with your phone so you can put it back after your done cooking.

As long as you load the charcoal basket to the same level every time you will get consistent results from the PBC. That is why I love that cooker!

I tried cooking in mine with half a basket once. I always filler up now.
