Barrel Cookin Weekend

It was a long week, with storms, tornadoes, hail, and then more rain.  We had a beautiful weekend, low 60s and sunny.  So Saturday I did up 3 racks of ribs.  Testing out different rubs, we have a neighborhood backyard rib brawl in July.  The middle plate won, with the far right a close second.  It took about 4hrs, I used lighter fluid this time.  Barrel ran about 275, most of time.  They were delicious.  Sunday I tried chicken again, lighter fluid method.  I pulled one rod out, I like to cook chicken at a higher temp.  It sat around 310.  I cooked the chicken to an internal of 169, I know 165 is the new standard.  But I don't trust it still.  The chicken came out awesome.  I cant use any other word for it really.  I put the PBC Beef and Game on it.  I used one fist size chunk of apple wood on both cooks.
