I Just want to put out ribs like Sparky does!
My Saturday.......in pictures!


This is where Sparky comes in. Much respect for Sparky, his ribs are inspiring.

RUM???  Most of that first pict was Tito's Vodka!!  Whatever, you know how to "prepare the chef" for battle.  The ribs look really tasty, IMO.  You should join us at the Fall Gathering.  Rumor has it that Sparky may show up for a "rib cooking demonstration"!  We could have a challenge!!

I used Penzey's spices Jerk Pork for the rub.



And for the Glaze I dissolved about 1 1/4 cup raw sugar in about 3/4 cup water, added about a 1/4 cup sherry vinegar, a tablespoon of Vietnamese fish sauce and a touch of nutmeg. Bring that to a boil and simmer until slightly thick.
Could add a chipotle powder to it for a little smokey heat.

Glazed the ribs 5 minutes before taking them off the PBC and glazed them again before serving.
Glaze is not overly sweet, you can taste the ribs.

Nobody makes ribs like Sparky. He is our resident rib-meister...but ya sure came close  8)  Outstanding looking ribs.
