First Brisket - 4lb flat

Went to my local Sam's Club a few days back and picked up a 4lb Prime brisket flat. Used KBB with lighter fluid starting method. PBC was rolling 400F to start and went down to 325 by the end of the cook. Olive oil and Beef & Game seasoning rub and hung it until 160F IT (took less than 2 hrs). Pulled it and double-wrap foiled with 4oz of Bud Light. Put it on the grate and pulled it 1hr40min later at 207F IT. Immediately wrapped in towel and set in cooker for 3hrs. Ended up with just a hair under 2 cups of au jus. The cut was so tender that the meat started falling apart as I cut it and it sounded like I was squeezing a sponge! TASTE AND TEXTURE ARE GREAT! Results are below. Before my next flat, I'm going to pick up the $15 electric meat slicer from HF so I can get some nice thin strips for sandwiches!

I ate some again last night (remainder is for a coworker and I at lunch today!). Put some of the au jus on it and paired it with a bit of KC Masterpiece. EPIC!

haha i like that, hunk of cow!  nice cook man, i forgot which member it was, but i think the next time i do a briskie im gonna try their method of just hanging it till 170's or so then finish it on the grate.  curious what kind of bark that will give and if it will still be moist even without the crutch method.
