Smoked Salmon on the PBC - A-MAZ-ING!

So, last weekend I did some smoked salmon on the PBC.  I just used the PBC Beef and Game seasoning as recommended and WOW did they turn out.  Paired them up with some roasted garlic, grape tomatoes in a linguine with olive oil, salt 'n pepper and parm cheese.  30 min. in smoker is all it needed.

I definitely need to try that. It would be nice to at least get real close to what we found at Ted Peters Famous Smoked Fish, in South Saint Petersburg, FL (http://www.tedpetersfish.com/).

How much charcoal did you load?

Did you add any wood?

How much charcoal did you load?
 
Did you add any wood?

I did a "mostly" full basket.  once I was done, I plugged it up and was able to "salvage" some of the coals.  Tossed them on top of the next batch as has been recommended by some here.  Seems to work for me.

I didn't use any wood on this one.  I was just trying to get used to the cooker still.

your salmon and plate looks fantastic!!!! i did a steelhead salmon filet with skin last week and it was phenomenal!!!  don't know if you have a costco close but they have brilliant filets at 6.99/lb.

like you mentioned it cooks quite fast so i didn't use a smoke bomb but used about 2 handfuls of apple wood chips which gave my fish a deeper red color but the smoky flavor was accentuated with the apple.  if you haven't tried it before with apple, try it on your next fish cook!!!

If salmon is smoked properly, it will usually win-over those who say they don't typically enjoy it.

Has anyone noticed a difference between fresh and frozen salmon filets (or any fish, for that matter)?

We see a big difference between fresh and frozen chicken. Fresh comes out much more tender and juicy.

(and by fresh, I am referring to meat that has never been frozen)
