Perfect Med-Rare NY Strips

Ok, so there was a sale at my butcher shop on NY Strips this past weekend so I HAD to make some.  Smoked in the PBC till internal temp hit 115.  Then I moved them over to my Weber Genesis with grill grates on the burners for a sear in the rear at the hottest setting. Approx. 2 min. per side is all it takes.  Pair them with some smoked corn on the cob (this cannot be under stated - ITS THE BEST WAY TO DO CORN PERIOD) and garlic mashed potatoes.

I've thought about PBC corn many times, but never did it. Thanks for the reminder - putting a post-it note on the fridge! Your plate looks fantastic - great job!

Nice job....I guess that would be a reverse sear on the PBC....love the hanging corn...yep I am going to try that.

genius idea with the hanging corn!!! ive done the corn in pbc but did it with the husks on as instructed in some other post i read.  i think im doing your method next!!
