Wendy's Mom and Sister are coming to visit next weekend and we are going to do another pork butt when they are here and I am already planning on another omelet or two

Well buddy I've already taken a small pkg. of PP out of the freezer for Sunday's PP omelets! I hope they end up looking  1/2 as nice as yours!

They will. Wendy fried em up a bit to get the pp warm. Don't forget your Mexican 3 cheese blend to toss on top and inside
