Gene's Beef Shorts he made got my mouth watering and I really wanted to try something new.

Day 0, had a discussion with my butcher on what I would  be attempting to do.


Day 1, Cleaned and salted each. He gave me two extra to also do for him, no problem keep your butcher happy ;D




Into the fridge over night. more tomorrow.

Out of the fridge after about a 20hr dry brine


Glue and Rub Used


Applied


Ready for foiling, internal temp 165F






Pulled at 202F I will go longer next time. (Yes they are done Pappy)

Conclusion. real good flavor but some a little tough so that is why I would take the temp a little higher.
