Title: "Flame Kissed" Beef Ribs

We had a little get together this evening at our house.  Mr. and Mrs. Tee and Mr. and Mrs. Hub joined my wife and I for dinner.  The menu included a platter of beef ribs, two kinds of Hill Country Slaw (from Tee), grilled veggies and a tomato pie from Hub.  I cooked the ribs with pecan and cherry pellets on my MAK.  We had a “brief” bit of excitement at the end when the grease caught fire and the ribs got a quick crust added to them.  All is good.  No one was hurt, and the food came out great.  I also made two cakes.  A single layer coconut cake and a cranberry-sour cream bundt cake.  Recipes to follow.

I trimmed there racks of beef bones and seasoned them differently.  The biggest rack was seasoned with some of Tee’s Top Secret 2A.

The other two were seasoned with SPG.

Here is the “flame kissed” part of the cook.  It took all three of us (Tee, Hub and me) to get them off the grill before they really became crispy critters.

Tee’s Hill Country Slaw.  He made two versions, both with jalapeño”s.  One had more jalapeño than the other.  Both were great.

Hub allowed me to take a funny picture of him “appearing to use” Texas Pete hot sauce.  For those who don’t know Hub, he CANNOT stand Texas Pete in any form.

These bones are clean, for the most part.

I made a cranberry-sour cream bundt cake with a simple glaze on it.  This was a not Rick’s bundt cake.  No alcohol was used in the recipe.  We saved that for after dinner.

My one layer coconut cake.  I have now made this four times.  It is really easy to make and is a definite winner.

Everything looks superb.  love the deep smoke ring on those ribs.

Gotta ask:  what caused the grease fire in the Mak??

I wanted to add a little "crust" to the ribs.  So I turned the MAK up from 220 to 450 to finish them.  Didn't think about all the grease I had generated.  I am glad we caught it in time.

Now I am scheduled to do a total grill clean-up.  Might be a good time to get Tee over and really give the MAK a cleaning like he did with his recently.

I think with all the good vittles Tee chowed down....a little cleaning help would be the right thing to do  ;)

He will have to take off his fancy cowboy shirt of course before the cleaning starts  ;D

Outstanding meal!!!! Looks like you guys had a blast :)

The MAK grease fire?!?!  Any damage to the MAK? Any discoloration to the stainless, or damage to the powder coat?

Great looking food there Art! The more that I look, the hungrier I'm getting!  But an assemblage of friends is a tough one to beat!  ;D

Looks like some top notch food was prepared!!! You did get a great crust on the ribs!!! :) I hope you had a bottle of Cholula for Hub!!! Hub we need that tomato pie recipe!!! Don

Were you able to get Tee to leave? He gets a little clingy

A little discoloration to the SS.  The powder coat was gone a long time ago. After I get it stripped down and clean, I will look at putting some kind of finish where the powder coat used to be.  Any suggestions?

Recipes are forthcoming. 

Tee just left a few minutes ago.  The trick is to make sure Mrs. Tee is there.  When she says it is time to go, he listens!

No suggestions on powder coat. I'd freak out to see my MAK go up in flames like that.

Fantastic!
