Nah, no war stuff here but I thought I'd give all you vets a cheap thrill.
SWMBO and I are off for a month-long visit to Portugal & Park City in a couple of days so we're using up whatever's in the house before we leave. I found a small flank steak in the freezer and a bunch of veggies in the fridge so...
• Butterflied the flank steak and then marinated it in soy sauce, olive oil, salt, pepper, & garlic for a few hours,
• Rolled & tied it with some Gorgonzola, spinach, red bell pepper, Mexican chorizo, and onion,
• Approaching hurricanes and Emperor made it impractical to grill so threw it in a 350o oven for about 45 minutes (IT 140o),
• Let it rest for 10 minutes while SWMBO made some stir-fried veggies,
• Plated it up and dined well.
This is obviously SWMBO's plate (only one "pinwheel") but you get the idea...

Turtle, that plate got my taste buds standing on end. What a great clean out the freezer and fridge meal. Safe travels for you and SWMBO.....and, with the hurricane passing by, don't forget to tie down the lawn chair this time.

I love flank steak rolled up with goodies in it. Sorry the weather didn't cooperate (a rare event in HI). Have a safe trip!
