As usual, I buy one that is too big for the amount of folks we have over for dinner. So I have about 3 lbs of roast left.
Usually I use the leftovers to make prime rib sandwiches, or re-heat a slice of roast.
Anyone have any other suggestions/ recipes?

Sorry, Gus - never had that problem (but I do like the occasional skillet of roast beef hash). You might also consider tacos or quesadillas, stroganoff, Philly Cheesesteak, beef & broccoli, beef Bourguignon, Thai beef salad, or beef pot pie. Good luck.

Beef Salad Spread....add some onions, sweet pickle relish or sweet pickles, mayo or Miracle Whip, maybe some smoked peppers, etc., and grind it all up for a great treat. I like it spread on rye bread with a slice of Swiss cheese and horsey sauce. Makes a great sandwich.

X2 -- I hadn't thought of this in years until OD posted it. My mother used to take our leftover roast chunks and do this. Loved those sandwiches!

I have been using mine for sandwiches, slice it thinly on toast with some cheese and cant forget the horseradish. Mmmmmm
One of the many times I wish I had a deli slicer.

I had to toss it in the freezer but will be making stroganoff this weekend
