side note: currently reading threw your PBC thread (getting hungrier by the post) and awaiting my Christmas gift of a PBC from the Mrs. I'm excited and wish work wasn't as crazy so I could have time to get is sooner!

I think you should convince her to get it before Christmas. That way you can do a few practice cooks before Christmas.
