No name dish

I don't know how to call it .
i had some leftover mince meat and aubergine from a moussaka .
so i made that .
put the aubergine in the oven with olive oil moulded it in a mould .
added the meat , on top of it mozzarella , closed it with a slice of aubergine .
added cheddar cheese on top   .
back in to the oven till the cheese melted .

I would chalk it up to a stuffed aubergine (eggplant).  Looks good!

Nice creativity Ahron!

aubergine is called eggplant by some of us. I like using it because it absorbs other flavors and maintains a meat-like texture. Your dish looks like it could be called an aubergine lasagna muffin. ;) ;D I like it!

Will be trying this one.   Never cared for eggplant before trip to Italy. Had it in a lasagna where noodles were replaced with eggplant.

Some of the world's best dishes didn't have a name when the cook first put his creative juices to work...just as you did.  Who knows. One day we maybe able to say, "I remember when Ol' Ahron invented that world reknown dish."

This is the best recipe for eggplant that I have ever made, comes out like lasagna. Dave beat Bobby Flay in a throw down.

Oil
2 large eggplants
All-purpose flour
4 eggs
Bread crumbs, add garlic and romano or parmesan, oregano, basil
1 quart marinara sauce
8 ounces sliced dry mozzarella
4 ounces grated Romano
Preheat oven to 350º and heat oil in a large pan, Dutch oven or deep-fryer.
Peel the eggplant and slice into 1/4-inch thick slices. Coat each side of the eggplant with the flour.  In a separate bowl beat 4 eggs and dip the eggplant into the egg to coat both sides. Then take your bread crumbs and do the same to coat each side.
Once the oil is hot, put the eggplant in the hot oil and fry until golden brown. You can also use a deep-fryer and leave in for about 2 to 3 minutes.
Once all of the eggplant has been fried, get a rectangular baking pan and start the layering by adding the marinara sauce to the bottom of the pan, dip eggplant in marinara sauce before layering, then layer the eggplant, more sauce, fresh mozzarella, Romano cheese, and continue to layer until you have reached the top of the pan. Top off with sauce, mozzarella, and grated Romano. Place the eggplant into the oven and cook for 20 to 25 minutes.
