Sirloin Roast in Coffee brine with tomatoe/M3 rub (picture heavy)

I started making coffee brines a few years back and even had one of them published in America Cooks by CharBroil  :)     

So thought I'd make another version but this time add tomatoe paste and Tee's M3 rub

So here is how I did this one.

I made a coffee brine out of 6 cups of coffee, 1/2 cup of kosher salt, 1 Table spoon of Rosemary
1 Table spoon black pepper   

After a two hour soak (wanted 12 hrs) but didn't have time.   I dried the roast off and rubbed with the tomatoe rub (see 2nd picture for players) I read that tomatoes have something called  "UMAMI"  which gives beef a better and richer flavor.   So I made a rub with tomatoe paste and Tee's M3 rub + other spices
 
Placed it in my pellet grill and smoked it till 128 IT was reached (took 2 hrs) then let it rest for 30 min's before I moved it to the Grill2Go grill and GrillGrates.  Seared the roast for a few mins on both sides then pulled rested for sometime (had to go visit the in-laws  ??? ) came home  and sliced a piece off to taste.  Will slice Monday for sammies .

Scale of 1 to 10 this would be a 9 for sure

Not really, but then again it was only in for two hrs not the twelve hrs I wanted.   The rub with tomato paste did help out a lot and Tee's M3 was wonderful.   Next time I will brine for the twelve hrs and rub tomato with M3 again.
 
It did have a very nice mild smoke flavor and little crunchy bits on the out side.   This is a very good roast and I look forward to lunch!! :D :D :D
 
The idea of letting it rest before the sear came from America's Test Kitchen.  They had a sirloin roast article similar to this about a year ago in their magazine.

Never heard of a coffee brine before, but it sounds delicious - definitely a "must try"!

I finaly got the time to slice up the roast.   I have to admit one of the best roast I have ever cooked

Looks like tomato rub be on all roast I cook from now on
