Venison rump
« Reply #-1 on: December 28, 2014, 09:49:11 AM »
Today I cooked a venison rump, which I divided into the main rump and the rump filet. The main rump was grilled over direkt heat and cooked medium over indirect heat. The rump filet was grilled over direct heat from each side. Both was sliced and served with sauce, green beans, and spätzle.

That looks great!!  What kind of sauce did you use with the venison?  Is it a berry sauce?

Some of the venison meat was roasted in a skillet with a finely chopped shallot. Then I added red wine and Porto, some chopped ginger bread and later a bit butter. No berries at all. ;)
