Brisket Chili - easy use of leftovers

I have made a few different things with leftover brisket.  I have done pizza, omeletts, french dip sandwiches (a family favorite at our house) to name a few.

This weekend I smoked a brisket on Saturday.  The bride was out of town so my buddy came over and we had brisket.  Sunday rolled around and I was thinking of something to do with the leftovers that I had not tried before so I decided chili made sense.

I scoured the site here and did not find what I was looking for and tried the internet and was overwhelmed with recipes.  I finally decided to break out the "Cooks Country" cookbook and see what they had.  I found a recipe that I thought looked good (had spices I liked) and did not look overwhelming or difficult as I had a lot of projects going this weekend.

I broke out the dutch oven and substituted leftover cubed brisket in place of the ground beef in the recipe.  Next time I would increase the garlic and cumin a bit but other than that it turned out pretty darn good!

frying the onion, garlic, and red pepper and seasonings in a little canola oil


added the beans, crushed tomatoes, and freshly blended tomato juice


simmered for an hour then added the cubed brisket from Saturday's smoke


simmered for another hour while we were at church - boy the house smelled great when we got home


I will be using this one again it was really good. - The leftovers today for lunch were even better!!!!

ohhhh boy that looks good - don't care who complains about beans, this sounds excellent!

I been tellin' folks for years that there's no finer meat for chili than smoked brisket point. That apparently also holds true for that thick bean and tomato soup/stew that lotsa y'all insist on making.

Hah - I read your recipe for chili and while it looked excellent, I looked at my watch and at my to-do list that I made and it just didn't pencil out (and I did not have time to go to the market for the 4000 ingredients it called for  ;))

Looks excellent with the tender smoked brisket!

I'm with Pam. Some jalapeños and corn bread would complete that meal!

Awe Pam - I knew it needed a little something extra - the jalapeno cornbread is an EXCELLENT idea - there is always a "next time"  :D
