Irish soda Bread

In Honor of St. Patty's Day..we celebrate big up here.  made a loaf of Mary O'REilly Irish soda Bread, but Before baking, but a cross was cut on the top with a knife, to ward off the devil and protect the householdy , acording to legend. Very easy to make and taste so good with butter and orange marmalade.  I also put a CB roast in the Nesco cooker and am having Homemade rye bread with homemade sauerkraut and swiss chees and CB sammiches for supper..Thanks for looking.  Pam  .☆´¯`•.¸¸. ི♥ྀ.

Pam that sounds/looks great :D.....Does your soda bread have a moist or dry inside......most that I have dad are dry but my wife makes a moist one....Just curious?

Pam that sounds/looks great :D.....Does your soda bread have a moist or dry inside......most that I have dad are dry but my wife makes a moist one....Just curious?
Tailgating..mine is moist inside and a crust on the outside. I spread milk on crust before baking. Makes it pretty. and we all know , it has to be pretty too.  Pam  .☆´¯`•.¸¸. ི♥ྀ.

Ok guys..here it is
"The Original" Marilyn O'Reilly's Irish Soda Bread
3 cups flour
1/4 cup sugar
1 Tbs baking powder
1 tsp baking soda
4 tbs butter soft - I let sit out overnight
2 Tbs caraway seeds - optional but it makes it - I crush some and then add whole seeds
1 cup raisin
1 cup buttermilk or 1 cup milk with 1 Tbs vinegar and let sit for about 5 minutes
1 egg
Preheat oven to 400º. Combine flour, sugar, baking powder, soda and salt. add butter and rub until butter is gone, I put in KitchenAid mixer. Add caraway seeds and raisins, Whisk in buttermilk and egg. Turn dough out onto floured board, it will be sticky so flour it good. knead a few time and shape into a round. Transfer to a cookie sheet and cut a cross into the top. According to Legend: Before baking, a cross was cut on the top with a knife, to ward off the devil and protect the household. Brush with milk over top and bake for 15 minutes at 400º, then reduce heat to 350º and bake for 20 more minutes or until toothpick inserted in center comes clean. Mine took a lot longer. Depends on how flat you make it. Cool on rack and serve with butter and orange marmalade.
