Found that there was one potato and a few slices of cored beef leftover in the refrigerator this morning.  First thought was some corned beef hash with a couple of eggs on top.



My wife wanted an omelet with just shredded cheese and some green onions.  No problem.  I fixed hers and then decided that I would make an omelet for myself using the above ingredients.  Tossed the few remaining green onions on top to finish off my creation.  Turned out to be very tasty.

oh boy that looks good! I love a "found ingredients" omelet. Very nice!

Actually, they were cold when I diced them up, but they heated up pretty well in the omelet.  If I do it again, I will probably go ahead and put a "little crisp" on both the CB and potatoes before adding to the omelet.
