 I've done a couple of these but I think this one turned out the best, so I thought I would post it. It's very easy to do and makes Great sandwiches or even just pieces for snacks.
 I rinsed off the seasoning and dried the meat off well. I put garlic powder and a small amout of gunpowder on it.
 I put it on the smoker with the firey jerk ribs on Sunday afternoon. It smoked with pecan wood for several hours.
 Tonight I pulled it out, warmed it and sliced it. It took the smoke really well. 
This is so good I now pick up several of these any time I find them on sale.
I bet this would be great done in a PBC.

I did one in the PBC on St. Patricks Day and I was impressed with the results. Since it was corned I soaked it for 24 hours changing out the water every 3 hours to get as much salt out of it as I could. I then used a salt free rub and let hang for the entire cook.  My wife was happy with that cook.  I need to find them at a descent price and pack a few in the freezer.  :)  :)
