80 Pounds of Beef Ribs

I will be smoking 80 pounds of beef ribs today and tomorrow for my fraternity.  Mainly looking to give them a good hickory smoke flavor and partially cook them.  I'll vacuum seal them and then they can finish cooking them in the oven before they serve them.  I may have to pull several pounds for quality control.

As a recently retired QA guy, I will determine what my "Sample Size" should be and will give you all the help you need on the quality part of this endeavor  :P :P :P :P

I decided that I should check to see how many pounds of bones I really had.  As it turns out, there was 103 pounds of nice looking beef ribs.  I saved one 18 pound package for future "reference".  They still get their 80 pounds.  Actually, they will get 85 pounds of wonderful beef ribs.  I will have a meal in the future that will be out-of-sight.

It is looking like I will have to cook three more batches on my MAK.  I don't want to over-crowd them while they are cooking.  I will be posting some more pictures of the actual cook.  NO UNICORN BEEF RIBS HERE!!
