New Years Eve Seafood Smorgasbord

We decided to have a seafood smorgasbord tonight for a relaxed at-home dinner.  We limited ourselves to three of our favorites, clams, mussels and bay scallops.  We thought that lobster might be a bit much tonight.  Besides, we are planning on a special lobster dinner for her birthday in a couple of weeks.

I used my 2-level steamer.  I put the Chardonnay with minced garlic in the bottom pan, with the clams in the first steam pan and PEI mussels in the top steam pan.  While this was going on, I had taken a pan and added clarified butter and more garlic and “poached” the bay scallops.  They were super tender and sweet.  We shared a bottle of Prosecco to wash down all this goodness.  Folks, it might be an early night for me.  Did I mention I had a small glass of cucumber vodka over ice while I was preparing the meal.  It all came out about the same time.  This was a good thing.
