Sauce vs spice
« Reply #-1 on: February 28, 2016, 09:13:50 AM »
I watched Toms video this morning and it brought up a question.

If you know your going to use BBQ sauce on your ribs do you tend to use rubs/ dry spices as well?
Is there really any need?
I have stopped spicing first if I'm sauceing but always ask myself this question...
I know salt is an issue but it's the spices I'm curious about.

I am not sure if there is a "need" if your going to sauce but I always season the ribs with some kind of seasoning or rub regardless.

I just can't place them in the smoker without something on them. If feels weird lol.

I rarely sauce but when I do I will apply the sauce on them before I start too.

I don't over spice mine, basically salt, pepper & gahhlick, but I serve sauce on the side because the sauce doesn't like me, I always make some just for me and sauce the rest for eveyone else. Best of both worlds..Old Dave and Jan also does this for me..they are so good to me.. .☆´¯`•.¸¸. ི♥ྀ.

For me, the flavor of the meat is the foundation of the dish and the sauce is the enhancement.  So I season/spice the meat even when I know I'm using a sauce.  Easy on the sauce.

But that's my preference.

I rarely sauce anything,  so if I do it's kind of a last minute decision,  and the meat has already been rubbed or seasoned. I always have a sauce on hand for guests tho. Everyone's tastes need to be met! 8)

I always add spices/rub. I rarely sauce while cooking and if I do I do it very lightly.

I am not a big sauce fan like mine with rubs or seasonings. If I sauce I want it set up well and I have sauce on the side for anyone that wants it. Don

Layers of favors. When I'm cooking ribs I rub them, I usually spritz a few times, and will cover with alight layer of sauce during the last 20-30 minutes.

They're always hit so I figure it works.
