I decided to make some Bourbon Bacon Jam for the Ohio Buckeye Gathering.  The recipe follows.  I quadrupled the recipe.  I noted any changes and specific products I used.

Bourbon Bacon Jam Recipe

Recipe By: Author: SAVORY SWEET LIFE / ALICE CURRAH
Yield: 1 cup

Ingredients:

1 lb. uncooked sliced bacon, cut into small pieces
1 small yellow onion, diced
1/2 cup strongly brewed coffee  I used Kona coffee
1/2 cup apple cider vinegar
1/2 cup granulated white sugar
2 tablespoons molasses
2 teaspoons Tabasco Brand Garlic Pepper Sauce
2 tablespoons maple syrup
1 tablespoon bourbon  I used Evan Williams because it has a fairly "mild" taste and would not overpower the rest of the recipe.  I doubled the amount called for in the recipe.
Tiny pinch of ground cloves

Directions:

1. In a large skillet, cook the bacon until cooked and brown. Transfer the bacon to a plate lined with a paper towel.

2. Carefully remove all the oil from the pan except for one tablespoon. Add the onions and cook for 5 minutes until soft. Then add the coffee, vinegar, sugar, molasses, and Tabasco Brand Garlic Pepper Sauce.

3. Bring the mixture to a boil and add the bacon back. Reduce the temperature to low and cook for 15 minutes, stirring occasionally. Turn off the heat.

4. Add the maple syrup, bourbon, and cloves. Scrape everything from the bottom of the pan and stir. Allow the mixture to cool before serving.

Here is the bacon in the pan cooking up.  This is the step where I added some Super Pig to the bacon.



Here we are draining on some paper towels.



Everyone in the pool.  Time to simmer down the liquid and cook the bacon more tender.



Here is the bacon mixture after I drained any grease off.



Into the food processor to make a consistent spreadable jam.



Finally, into the jars.  These jars are some of what I made.



It is a lot of work.  However, it will be good spread on crackers and enjoyed with a beer.
