I was writing a blog piece on tailgating and included my gumbo as one of the featured recipes... It got me inspired to make a batch.

Of course the first thing was to make the roux... an hour-long process but well worth it.

Then onto the gumbo with chicken and Andouille. Great eats on a cool fall evening in New England!

Definately worth the time... I call it my "three beer" roux. By the time you've finished three beers, it's ready!
