Thanks for asking Don, so the follows:
Picked a double pack of St. Louis cut untrimmed spares from Sams. These are really large ribs and I was surprised.
Trimmed with membrane removed and Butt Rub applied.
Vac Pac and in the fridge for one day and than into the freezer to smoke when I am ready.
In the a pre-heated Grid Iron at 225.
Thee and half hours and time to foil in the Johnny Triggs style with my Mohunken
Butt Rub.
Foiled and back in the pit.
Removed from foil after two hours at 250 pit temp and glazed applied.
One and half hours later at 225 ribs and ready to be cut.
