Triple Decker Old Fashioned Diner Burgers

I miss the flavor of those thin diner style burgers flash fried on a flattop grill.  So turned the keg into Bamabob's Diner.
While the baking steel was coming up to temp, coated it with a little bacon grease and grilled a red sweet onion to flavor the griddle and toasted a home made bun.
 


Thin and flat burgers just on



These things go fast, flip and salt immediately after flipping.  That all over sear on a thin burger makes them special



Bite me, it screams.  From the bottom up, toasted bun, teaspoon mustard, burger, cheese, burger, very thin slice of raw onion, cheese, burger, teaspoon ketchup, toasted bun.



It's hard to beat those six sides of seared mallard reaction fresh ground chuck.  It may be awhile before we "grill" burgers again.
Sometimes you have to go in a circle to reach your destination.

We prefer to use bread flour instead of AP.  Warning, once you try these ordinary buns just won't cut it.  LOL  :D ;)
And yes, King Arthur brand flour really does make a difference!!

I second the KA flour up vote. It really does make a difference. I buy it from Amazon as it actually cheaper than what I can get it for locally

Tailgate, in the baking business?  You have a recipe for Persians?  We used to get them at a place called the Donut Hause in Springboro Ohio.  Can't find them anywhere.
Similar to a cinnamon roll but had something special going on, not sure what.

LOL yes We had a commercial bakery in CT. We made straight hamburger rolls for the public under the Sunbeam Bread Brand Our rolls won many awards but what I could see is that this was a special roll not a water based roll. We did not make Persians but our rolls were moist enough that they were not the typical dry roll you buy in the supermarkets today. The best roll on the market today in our area are Martins Potatoes Rolls IMO. If you have had a Sunbeam Roll not all were created the same. We were one of the best in the world from about a 100 bakeries at the time.
