I had a pie shell in the freezer that needed used. I had found a recipe that was an old Amish recipe for a brown sugar pie. This was about as simple as you could get. The ingredients were just brown sugar some flour and a can of condensed milk. It said it would not set up well and be a little runny.

I baked mine the full 60 minutes and it was not set up with some runny on top I think was butter. I think next time if I bake one I would place the butter on the brown sugar flour mix instead of putting it in after adding the milk. I grated some fresh nutmeg on top and sprinkled on some cinnamon and let it cool until after supper.

Now here is the part that maybe I should have posted under “Humor”. I ate my supper then laid down for a short nap. I got up wanting a piece of the pie to try. Looking at it the gooey goodness was clearly gone from two pieces and most of the crust was left in the pan.

I ask the wife how she liked it; she said it was pretty good. I said it must have been you ate two pieces. She said I only had one piece. I said Hon you cannot scoop all the filling from two pieces and claim you only ate one piece! Only she could come up with one like that! :)

I ate a piece plus her crust and it was pretty good. It didn’t come out of the pan well for a nice presentation; but if it tastes good enough who cares about presentation!

Recipe:

Amish Sugar Pie
 
      Yield: 1 servings
 
      1    Unbaked 8" pie shell
      1 c  Brown sugar
      3 tb Flour
    1/4 ts Salt
  1 1/2 c  Evaporated milk
      3 tb Butter
           Cinnamon to taste
 
  The following is a Sugar Pie recipe that came from Northern
  Indiana and is an old Amish recipe. It is very, very good -
  and different.
 
  Preheat oven to 350F.  In a small bowl blend together the
  sugar, flour and salt.  Spread in bottom of pie shell.
  Pour the milk over the sugar mixture, but do not stir.  Dot
  with the butter and sprinkle cinnamon over all.  Bake for
  50-60 minutes, or until filling bubbles in center.
  This will not be a firm custard, so don't despair if it
  doesn't look like the custard pies you are accustomed to!
  Pie is best served at room temperature.

Is is like a custard pie Don? Looking at the pictures and ingredients - just wondering if that is kind off the taste to expect?

Don..I have a recipe here for the best sugar cream pie I ever tasted..recipe is similar and it comes out beautiful.
Sugar Cream Pie
1/2 cup brown sugar
1/2 cup white sugar
3 HEAPING tablespoons flour
2 1/2 pints of whippng heavy cream
pinch 'O salt
SIFT and mix dry ingredients, adding whipping cream gradually till mixed very well. Pour into 9" pie crust , store bought or home made, sprinkle with cinnamon and BAKE at 350º for almost an hour. Shake the pie on the rack to gently test for doneness, it shouldn't jiggle wildly. Bake pie on a sheet pan beneath. Keep refrigerated.
