Seared Salmon with Pan fried noodles

Quick and easy dinner for the Mrs. and I the other night.  Sockeye salmon went into a marinade of Ponzu, Soy Sauce, Chili Garlic Sauce, Hoisin, and Sesame Oil (make extra same sauce used for noodles) I left it in the marinade about an hour, while I got the veg ready for the pan fried noodles.  I used a little red onion, green pepper (from my garden), Jalapeno (from my garden), farmers market green beans, carrot (from the garden), fresh lime juice, garlic (from the garden), and sesame oil.  The noodles are just plain ramen, you know the 100 for $1 packs you get to make it through college :P .  Boiled them per directions without using the seasoning packet.

I got my Cast iron pan hot and seared the salmon for a couple minutes in butter and sesame oil, flipped and popped it into the toasted over at 350 for another 5 minutes before turning off and letting it rest in the oven until everything else was ready (maybe another 5 minutes).  While the salmon was searing and cooking I boiled the water and started sauteing the green beans and carrots before adding the onion, and peppers.  I added a 1/4 of the lime here. Once everything was browned a little and noodles finished their three minute boiling bath I added the noodles to the veg and fried it up a bit before adding the same flavor mixture of the marinade and another 1/4 of the lime. Once that sauce reduced a little I added fresh chopped cilantro, and it was plate time with the salmon added on top.  I had sesame seeds but forgot to garnish with them be each plate had the other 2 lime quarters if needed.  Easy quick meal takes all of 10-15 minutes to cook once everything is prepped and ready to go!

Daaaang!  That is the best looking dish made with Ramen I have ever seen!  Nicely done!
