Pork sirloin roast
« Reply #-1 on: December 15, 2016, 12:49:24 PM »
Had a 2.5 lb pkrk sirloin roast in the bottom of the freezer for quite some time.  Couldn't find much online for recommendations as to how to cook it so i went  with sous vide.
Started  off  making a paste with some rosemary, garlic, kosher salt, pepper and EVOO.  Rubbed that all over it and bagged it with some more EVOO and some diced  shallot.
Dropped it into a 142 degree bath for about 4 hours.
Pulled and dried it and put in the broiler to brown for 5 or 6 minutes.
While browning  i made some gravy with some schrooms the juices from the bag and the shallots etc...
Served it with some mashed potatoes.
It came out pretty  juicy and tasty.  Sorry i floundered and didn't  get a pic of the full roast but heres a shot of todays lunch.
