Does flavor, tenderness, etc... improve if you cook longer in SV? Just got mine and trying to learn as much as I can about them.

I usually SV longer than most. The longer cook time does make for more tender meat.  The downside is too long of a cook can make it mushy-loose.  keep a log of your cook times and experience will soon govern your cooking time. I could have cut this cooking time by three hours, but it was more for convenience and serving time.

We really enjoy sv pork chops.
We usually let 'em go for about 2 hours.

I haven't thought of using the jus from the bag to make gravy, but I will be trying out now for sure.
