Just a Little (Literally) Brisket

I think I broke just about every old school BBQ rule today.  8.5 pound (after trim) select Walmart brisket cooked in the tiny DC pellet pooper.  Cooked at 275 until internal was around 175 and then foil wrapped and ran at 325 until it probed tender. Cooled off for a couple of minutes to stop the cooking and then tightened up the foil for about an hour to rest.  Binder was mayo and seasoning was just course salt and course pepper.  Turned out fork tender and was one of the better briskets I have done in a while.  The real saving grace to this piece was the near uniform 2 inch thickness of the flat despite it not being extremely marbled.
