2 weeks ago i put a nice piece of tip roast in a brine for pastrami i smoked it yesterday and today i sliced it .
it is my best ever pastrami .

OMG!!!  Now that is a fine looking piece of meat!  Lean, piled high on some Jewish rye, good deli mustard slathered on the bread, and of course, you can't have a good pastrami sammie without a good Jewish pickle.  I'm making myself hungry.  Nice job Ahron.

Thanks Guys and girls .
put the tip roast in a brine with sugar,honey, salt, cure#1 ,picling mix Jennifer Berries , inject 10% in to the meat .
leave for 14 days
mix CBP, crashed cu mine,garlic powder.
smoke at 225-250 pull at IT 145-155 .
