My Best pastrami ever.

MyBest pastrami ever.
I made my pastrami from sirloin .
i got an idea from Cliff (TentHunteR) so for my brine is replaced the honey with maple syrup .
i use  for  5 lb meat
1 gal water
1 1/2 cups kosher salt
1 1/2 cups brown sugar
2 TBS pickling spice
1/2  cup honey (this time maple )
1/4  cup minced garlic
 3 tsp cure#1
inject the meat with the brine .
leave the meat in the brine for 2 weeks in the fridge .
dry clean the meat .
i  cover it with 2 parts coriander 1 part b pepper 1 part garlic powder .
smoked at 225 f till IT 145 .

 












i sliced 2 thick slices for next week hash brown .

Bravo!  That's  some great looking pastrami. I really like seeing a little fat marbling in pastrami like that.

After the 2 weeks in the fridge did you soak it in fresh water?
