Getting ready to smoke Spares

It's another beautiful day on Cape Cod! Picked up a 4 1/2- pound slab of Spares, trimmed them St. Louis style, slathered with CYM and used CB's Memphis rub on the rack and CB's KC rub on the trimmings... Will cook them low and slow later today... I'm figuring about 3 1/2 hours.

Trim weight was about 3 pounds... cooked for about 4 hours at 225 with apple wood.

Smoked with just a rub and served with Memphis-style sauce.

Nice meal for a Monday night!
