New to the World of the PBC!

Hey everyone! I just joined the site and just got a PBC. So far ive had it three days and Ive done two cooks. My first cook was two racks of ribs. 3/4 of each rack turned out great. The ends got fairly chard and were dry. They were on for a little over two hours and then i racked them with no foil for a little over another hour. I didnt take any pics of this one...sorry. I will probably cut them in half next time. The PBC ran pretty hot for the first hour around 350.

My second cook was today. 7.5 PB and a whole chicken. I put the PB in at 10am and it came to 160 around 3. I then put a whole chicken on that i had de-spined. The cooker had been running at around 290 with the PB. After about thirty min with the chicken in the temp dropped to 220. I cracked the lid a little and it came back up to about 240. The PB had stalled for most of this time and seeing as how i had to feed people at 5 i decided to take it out and finish foiled in the oven at 305.

The PBC then got to about 260 and stayed there for the remainder of the chicken cook, another 1.5 hours. The chicken turned out pretty good. Very juicy and flavorful and the skin was a little rubbery but still pretty good. The PB went for a total of 2.5 hours in the oven. The last 30 i cranked it up to 350 due to some hungry people! It had a nice smoke ring and good flavor. it wasn't quite as pull-able as i would have liked but was still pretty good. Just a couple of tough chunks.

Here is a pic of the left overs of the PB. I was in such a panic to get the food out i didnt think to take any pics of it before we ate it!

As for the ribs charring, cut them in half.

Bigg, ive read through a lot of it. Some great info there! You truly seem to be a master.

You've mentioned choking the PBC. Have you reused the leftover coals with the PBC or just used them on another grill? Also, you cook your birds pretty fast. Do you see any difference in juiciness/dryness when cooking them fast. Smoke Flavor? Id love to cook them quick and easy.

You've mentioned choking the PBC. Have you reused the leftover coals with the PBC or just used them on another grill? Also, you cook your birds pretty fast. Do you see any difference in juiciness/dryness when cooking them fast. Smoke Flavor? Id love to cook them quick and easy.

I used to reuse them but now I crack the lid open every time I'm done cooking, get the heat up  as a cleaning cycle.

As for the birds, I prefer the flavor of the fast cook. It has that grilled flavor, enough smokiness from just the coals and bird is still very juicy, skin is crispy every time.

I had to cut the ribs in half as they reached all the way to the coals. I did chicken and ribs in my first cook a couple of days ago which I documented here.  Ribs came out with great flavor but I think needed more time. Chicken, as yours, was not as crispy as I expected but great flavor.

Your varying temps must have been frustrating. My PBC settled in at 285 and did not vary much at all. I am at sea level and it was a windy day. That pork butt looks good. Thanks for sharing - I learn something with every post.
