Hello all,
Pulled the trigger and ordered my PBC today.

Now the hard part, waiting for the box.

Will keep you posted once get it and try it out.

If you're like many of us you'll have it lit and loaded an hour after it arrives. Watch the videos on the pit barrel site for starters and do it that way, and then start reading through Biggs massive 22 page thread for ideas on how to do things different. Figure out how it reacts before you go getting all crazy though.  Do you have a digital thermometer yet?

You are about to embark on a fun journey Chris. We have a number of folks here that can advise you on somethings to try- and the versatility of the PBC.

I am going to recommend that you first - follow the directions ( and YouTUbe videos ) that Noah and Amber have made about the lighting and uses for the PBC. Once yo have gained some confidence, and got a few cooks under your belt - you may want to try some of the fantastic/crazy/delicious looking cooks that some of the folks here have come up with.

But, first...cook a chicken, split in half ( north to south ;) ) in your PBC. It will be the best chicken you have ever eaten.

All the chicken talk is fine, but the thing makes some ridiculous ribs. In my opinion, ribs are its specialty, but I may be in the minority wth that opinion I think.

You're opinion is respected too, ribs in the PBC turn out great also.   Some of us have other go-to methods for ribs, mine became the pellet grill after I got it and sadly I neglected my WSM because of it.  Recently I reconnected with my WSM and did some fantastic ribs in it.  Now I will have to give ribs another shot in the PBC.

I only have 2 cooks so far. The first I used the PBC web site instructions. All kingsford, lid on. Flavor was amazing with both chicken and ribs but ribs a BIT fatty (I think they needed more time) and chicken was not crisp - may have needed more time. Flavor on both was off the chart. This past cook was wings that I just posted. Bottom line is this cooker is really easy to use, fast, and I am not sure I have gottne flavor this good, and this consistently, on any cooker. Note - I got this because it is NOT a smoker - my wife does not like heavy smoke flavor. What this does do is give a real smoke influence without the heaviness.

I love it so far. Read 1Bigg_er's thread that has like 22 pages. A veritable bible.

Congrats! Ive only had two cooks on the PBC but its awesome. Truly set it and forget it.
