Got 2 big chickens from Sams - always had good luck with them with respect to quality. Last minute cook, I split them, used Montreal Chicken - my rub supply rather low in the house I am in now - most of my spice are up in the PA home and can stay there till I get back!! - and I need to make a batch - there is also an Academy due to open in a week and will stock up there. I found the PBC rub great tasting but a tad too salty. Lit PBC, got coals going real well with full basket. Hung chickens 5:20 PM. Temp about 290. Cracked the lid a tad. Went back out 20 mins later and temp was like 380. Put lid on and dropped temp back to 290. Sort of see sawed it a bit between 290 and 330. Chicken breast 168 at 7:15. Pulled chickens out of grill and let sit for 15 mins. Result very good. Crispy skin, moist, great flavor. Quite happy with this cook. Wife was happy as well.. so that makes it a good dinner.


Had already pulled one half out and did temp check.


Nice crispy skin. Ready to carve. Since I did not do any fancy plating, we will just leave it at that.

When the wife's happy, it's definitely a good dinner!

Chicken skin always comes out looking so good off of those PBC's.

Very nice looking chicken. I also find Noah's rubs a bit to salty.  When at Academy, check and see if they have "Grub-Rub" made in Texas, has a touch of tenderizer in it..darn good stuff....they offer it on their website.............

I like the PBC rubs BECAUSE they are salty. But they are too salty for the rest of my clan...

I will use the PBC rub again. The taste was good. But I will use a very light hand with it. Never been to an Academy store. None anywhere near home in PA and when I saw the Academy sign on I95 in Palm Bay, FL, I took the exit, telling my wife I had to see this place. Wife asked  like what is so important! So I get there and there is an "Opening March 6" sign on the front of the building, the parking lot not visible from the highway. Several cars in front of me were also exiting the parking lot. Wife now says " This must be quite a place to attract cars when it is not even open".. I can order rubs from the net but it has been less a priority than the redecorating I am doing to this winter home. Retired just in time to have to pay for 2 houses!! LOL..

Great looking birds and like how well the PBC cooks.
 I have a question about cooking in the PBC.
How does it do with whole chickens?

I have never done a full chicken in the PBC. I hung a spatchcocked chicken a couple of weeks ago and as good as it was, I feel that halved chickens come out the best......
