Quick question on throwing on some chicken legs
« Reply #-1 on: March 03, 2015, 06:30:53 PM »
I am about to fire up slightly over a half basket of Charco. I'm going to run it fairly hot with one rebar out, and maybe even cracked the lid here and there and at the end. I have about a dozen legs I'm going to toss on. About how long should I expect? 45 minutes?

Probably too late now, I was going to suggest taking both rebars off.

Pulled one rebar and cracked the lid here and there. It did indeed take 45 minutes. I used one small chunk of applewood at the beginning and the Penzeys jerk seasoning, and something came out kind of bitter on the skin.  Plus it was still too chewey, but better than my last attempt. Skin was really dark.
Interior flavor was great. Exterior was a bit off. Still experimenting though.

Ive done 3 leg cooks and each one went approx 30 min using 1 rebar and cracking lid at approx 20 min mar.  one cook i wasn't happy with the skin because i used approx half a basket KB.  the other 2 cooks were absolutely fantastic for skin using about 3/4 full basket of KB.

Whatever I cook in the PBC I always use a full basket.

When cooking legs I like to use the Big Easy basket with the leg racks installed.

This is probably going to be my weekend smoke. I ordered the Big Easy Basket and its accessory kit (and they should be here Friday - PERFECT TIMING). Going to run to Sam's Club and pick up some drummies so I can get them rubbed down with All Purpose Seasoning before the smoking session!

Whenever/however I cook chicken, I like to uncover the chicken and let it sit uncovered in the fridge the night before. I think some of the other folk round here add a pinch of salt to the skin as well.  You will get much crispier skin this way......
