Boneless pork butt questions
« Reply #-1 on: October 03, 2016, 02:03:41 PM »
I agreed to bring  pulled pork to a  potluck at work later this week.
Even  on a PBC  I don't really have a enough time in the evening to  do smoke them  (My experience is  5.5 -6 hrs for a butt)

This leaves  me with my oven,  which I have made some pretty good  PP.

My Costco sells a two pack of butts that are boneless.    Anybody have any experience with smoking these??  Typically boneless roasts in the oven cook faster.

Any idea if so on the PBC and how much  quicker it may be??

Thanks

Cook time will depend on the size - either way, I would do a hybrid method of starting them on the PBC to get some "smoke" and finish in the oven if needed.

Ive done a butt where I did it on the smoker until about 170, put it in the fridge and then finished it in the oven the next day for a party and it was great!

If you need to speed up the time, just use the grate and keep the rebars out.  This is will increase the temperature of the PBC making the cook time faster.  Like eatin smoke said, it would depend on the size.  Also once it hits 140F wrap it in foil and this will also help speed the process up.

Never made those Costco butts in my PBC or oven but made a bunch in my pellet grill.

As far as quality goes you won't be disappointed.

I find that I do need to tie them off however because they remove the bone so aggressively that the butt can slide down onto itself.

Thanks  everybody.

After  I posted  I figured  I would try what you guys recommend.  Start off on the PBC and  finish in the oven.

I wondered about  tying,  figured they had to remove those bones somehow...

I did a pack of those boneless butts from costco a couple of months ago. They came out pretty good but there wasn't a huge time difference for me. I actually prefer the one's with the bone in.
